Carrot Cake With Cream Cheese Frosting

One of the all time classic and delicious combinations is Carrot Cake with Cream Cheese Frosting.  I have included my favorite recipe below. I love carrot cakes in general because they are so moist and I really love this recipe in particular because of the addition of the pecans to the frosting.

Carrot Cake

Ingredients:

1 1/2 cups vegetable oil
4 eggs
2 cups white sugar
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
2 cups plain flour
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
3 cups grated carrot
1 cup chopped pecans

Directions:

  1. Grease and flour a 9×13 inch pan. Preheat the oven to 350 degrees F .
  2. Beat together oil, eggs, sugar and vanilla extract.
  3. Mix in cinnamon, flour, salt, baking soda and baking powder.
  4. Fold in the pecans.
  5. Bake in the oven for 40-50 minutes
  6. Make sure it is completely cool before icing

Cream Cheese Frosting With Pecans

Ingredients:

1 (8 ounce) package softened cream cheese
1 teaspoon vanilla extract
1/2 cup softened butter
4 cups powdered sugar
1 cup chopped pecans

Directions:

  1. Combine cream cheese, vanilla extract and butter with an electric mixer on low speed until well combined.
  2. Gradually add the powdered sugar with the mixer at low speed
  3. Continue beating the mixture until smooth
  4. Stir in the pecans
