One of the all time classic and delicious combinations is Carrot Cake with Cream Cheese Frosting. I have included my favorite recipe below. I love carrot cakes in general because they are so moist and I really love this recipe in particular because of the addition of the pecans to the frosting.
Carrot Cake

Ingredients:
1 1/2 cups vegetable oil
4 eggs
2 cups white sugar
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
2 cups plain flour
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
3 cups grated carrot
1 cup chopped pecans
Directions:
- Grease and flour a 9×13 inch pan. Preheat the oven to 350 degrees F .
- Beat together oil, eggs, sugar and vanilla extract.
- Mix in cinnamon, flour, salt, baking soda and baking powder.
- Fold in the pecans.
- Bake in the oven for 40-50 minutes
- Make sure it is completely cool before icing
Cream Cheese Frosting With Pecans
Ingredients:
1 (8 ounce) package softened cream cheese
1 teaspoon vanilla extract
1/2 cup softened butter
4 cups powdered sugar
1 cup chopped pecans
Directions:
- Combine cream cheese, vanilla extract and butter with an electric mixer on low speed until well combined.
- Gradually add the powdered sugar with the mixer at low speed
- Continue beating the mixture until smooth
- Stir in the pecans
